Fabien, the chef

"Good products and taste above all".

Born in Charente-Maritime in a small oyster-farming port, the son of a butcher, Fabien was immersed in the world of gastronomy from an early age.

After completing his apprenticeship at a hotel school, he moved to Paris where he had the chance to work in some of the great Parisian restaurants with Guy Savoy and Christian Le Squer at the Pavillon Ledoyen, to name but a few.

Fabien then set off for the south of France. These experiences with Parisian and regional caterers and in seminar venues only increased his passion for good food.

In 2008, he and Angélique set up L'Eveil des papilles to share their love of good food and produce.

In 2010, he won 1st place in the Vaudieu competition, and in 2014 and 2016, he finished 3rd best French caterer in the French selection of the International Cup Catering.

Its cuisine

Fabien offers refined, creative cuisine based on local, seasonal produce. He makes a point of selecting quality products that bring out all the flavours and aromas of his dishes.
Creative to the core, constantly on the lookout for new trends, Fabien is brimming over with ideas to make every dish a perfect marriage of flavours, a subtle blend of passion and originality.
Because teamwork is vital to the smooth running of a kitchen, Fabien has surrounded himself with a multi-skilled team (pastry chef, cook, pork butcher, etc.) driven by a shared passion for good food.
